Caramelized Peanut Butter Chicken Wings

Ingredients:

  • 2 lbs (about 1 kg) chicken wings
  • 1/4 cup peanut butter (smooth or crunchy)
  • 1/4 cup soy sauce
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or lime juice
  • 1 tbsp sesame oil (optional, for aroma)
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger (optional)
  • 1/4 tsp chili flakes or sriracha (optional, for a spicy kick)
  • Water as needed to thin the sauce
  • Sesame seeds and chopped green onions (for garnish)

Instructions:

  1. Make the marinade:
    In a bowl, whisk together peanut butter, soy sauce, honey (or sugar), vinegar, sesame oil, garlic, ginger, and chili flakes. Add 1–2 tbsp water to loosen the sauce if it's too thick.
  2. Marinate the wings:
    Toss the chicken wings in the marinade until evenly coated. Cover and refrigerate for at least 1 hour (overnight is ideal).
  3. Cook the wings:
    Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Spread the wings out evenly and bake for 35–40 minutes, flipping halfway. Brush with any extra marinade during the last 10 minutes for extra caramelization.
  4. Garnish and serve:
    Sprinkle with sesame seeds and chopped green onions. Serve hot, with lime wedges if desired.
